Our Mexican street corn pasta salad recipe has quickly become a fan favorite around CheapCaribbean! This easy to make recipe combines one of our favorite items, Mexican street corn and pasta.... Talk about the perfect paring.
Meixcan Street Corn Pasta Salad
A deliciously easy and cheesy Mexican street corn pasta salad.
Salad
- 2 cups mini farfalla pasta
- 3 cups corn (canned) (or 3-4 ears of fresh corn)
- 1/2 cup black beans
- 1 avocado (diced)
- 2 tbsp cilantro (chopped)
- 1 tbsb jalapeno (diced)
- 5-7 strips bacon
- 1/2 cup queso fresco (crumbled)
Dressing
- 1/2 c full fat mayo
- 3 tbsp lime (juiced)
- 1/4 tsp paprika
- 1/2 tsp chili powder
- 1/8 tsp ground cumin
- 1/4 tbsp salt

Cook pasta accordingly. Drain and dry, completely.

If desired, roast corn (optional).

Combine cooled pasta, corn, avocado, onions, cilantro, jalapeno, bacon, and cheese and toss until mixed.

In a small bowl whisk dressing ingredients until blended well.

Pour dressing over salad mixture, toss well and enjoy!
