During the cooler months, this Healthy Taco Soup is perfect for holiday parties, casual get-togethers or just warming up. It's simple to make and everyone will love it.

What You Need: Extra lean ground turkey, unsalted chicken broth or stock, no salt added corn, no salt added diced tomatoes & green chiles, no salt added diced tomatoes (ROTEL), reduced sodium kidney beans, reduced sodium pinto beans, taco seasoning and dry ranch mix.

Step One:  In a large skillet, brown the meat over medium-high heat. Once nearly done, add in 1 tbsp of the taco seasoning. Set aside.

Step Two: In the bottom of a slow cooker, stir together the chicken broth, corn, diced tomatoes & green chiles, diced tomatoes (ROTEL), kidney beans, pinto beans, the remaining 1 tbsp of the taco seasoning and 1 tbsp dry ranch mix.

Step Three: Add the turkey and stir again.

Step Four: Cover and cook on high for 4-6 hours or on low for 6-8 hours. When done, top with your favorite toppings like reduced fat shredded cheddar and plain fat free greek yogurt. Green onions are optional.

  • 1 can no salt added diced tomatoes & green chiles
  • 1 can no salt added diced tomatoes (ROTEL)
  • 1 can reduced sodium kidney beans
  • 1 can reduced sodium pinto beans
  • 2 tbsp taco seasoning
  • 1 tbsp dry ranch mix
