This little slice of paradise is sure to have you reminiscing on all of the fruity drinks and sweet treats you had on your last beach vacay. And who can turn down a delicious treat that even has a few vitamins and nutrients? Not us!

Caribbean Fruit Pizza

The combination of a rich, chewy, sugar cookie, tangy but smooth cream cheese frosting, and lots of crisp fruit is absolutely irresistible!

Caribbean Fruit Pizza

 

  • 1 Roll Sugar Cookie Dough
  • 12 oz. Cream Cheese - Softened
  • 3 tbsp. Fresh Lemon Juice
  • 3 tbsp. Powdered Sugar
  • 1 tbsp. Vanilla Extract
  • 1/4 cup Sugar
  • 5 Mandarins (peeled)
  • 1 pint Strawberries (thinly sliced)
  • 4 Kiwis (thinly sliced)
  1. Preheat oven to 350 degrees.

  2. In an oven safe pan, press sugar cookie dough around the bottom, leaving a small around of room around the sides. 

  3. Bake sugar cookie dough for around 15 minutes, or until it starts to brown. 

  4. Allow cookie dough to cool completely. 

  5. Beat together softened cream cheese, sugar, powdered sugar, lemon juice, and lemon zest. 

  6. Spread mixture over cooled sugar cookie crust.

  7. Add fruit toppings. You can be creative and design them in a fun pattern. 

  8. Refrigerate and serve cold.
