Summertime almost always calls for a few things. Beach vacations, barbecues, and the same-old, boring side dishes at those barbecues. We have a coleslaw recipe that is going to put all other side dishes to shame at your next summertime bbq and have your guests thinking they're on a faraway island in the Caribbean while eating it! This Caribbean coleslaw recipe is both simple to make and delicious!
Caribbean Coleslaw
Coleslaw
- 4 cups Chopped Cabbage
- 3/4 cup Chopped Purple Cabbage
- 1 cup Shredded Carrots
- 3/4 cup Diced Pineapple
- 1 cup Thinly Sliced Mango
- 3 tbsp Red Onion
Dressing
- 1 cup Mayonnaise
- 1 tsp Dijon Mustard
- 3 tbsp Pineapple Juice
- 1 tbsp Sugar
- 1/4 tsp Celery Salt
- 1/2 Lemon (juiced)

In a large bowl, mix cabbages, carrots, pineapple, mango and red onion.

In a separate bowl, mix mayonnaise, dijon mustard, pineapple juice, sugar, celery salt and lemon until well blended. Should form a dressing type mixture.

Pour dressing over dry ingredients and mix until all ingredients are coated.

Chill for 30 minutes to an hour (or longer if desired).
